Brewing methods
Launched in Japan by the brand Origami, this method is designed to break the barriers between different types of filtration, as it can accommodate two radically different filter shapes: conical and flat-bottom filters.
The cup profile changes according to your choice: the conical filter highlights a fruity acidity, whilst the flat-bottom filter creates a more uniform extraction that boosts sweetness.

Grind : Medium-Fine
Ratio : 13g - 200ml (1:15.3 ratio)
Water Temperature : 94°C - 96°C
Pour 30 ml of water steadily, making concentric circles. Wait until 0:40.
Circular Pour
Pour 55 ml (bringing the total to 85g). The pour should be gentle yet firm to create a light agitation in the coffee bed. Wait until 1:10 - 1:20.
Circular Pour
Pour another 55 ml (bringing the total to 140g), give it a gentle swirl with your hands, and wait until 1:40 - 1:50.
Pour until you reach the total of 200ml.
Allow it to draw down completely. The total brew time should be approximately 2:30 - 3:00 minutes.
By using a flat-bottom filter to maximise the even contact surface, you will achieve an extremely aromatic and sweet cup with impeccable clarity of notes.
